The first time I watched one of Tess Begg’s videos on YouTube I told myself that if I ever won the lottery the first thing I would buy would be a Vitamix. I’m not kidding when I say that her smoothie bowls always look so delicious that I’ve contemplated dropping over $500 on a blender—lottery winnings or not. However, what I love most about her videos is how she shows how easy, accessible, and versatile eating a vegan diet can be, not to mention she’s incredibly fit and demonstrates how to eat vegan while staying active.
In the video above, Tess takes us through what she eats before and after her workout. The recipes include a delicious smoothie bowl—one that I’ve tried recreating several times, shamelessly—along with a humongous salad filled with my personal vegan favorites of lettuce, kale, cabbage, tempeh, and more! Tess proves that it’s easy to create not only tasty vegan meals, but also Instagram worthy dishes that will nourish your body before and after a workout, a long day at the office, or just about anything that your day brings you.
